If you are a fan of cabbage and looking for more ways to enjoy it, then the recipe I’m sharing today is definitely something different that you should try. It makes a nutritious accompaniment to rice or a grilled meat.

I think that cabbage is such an underrated vegetable, not many people use it in their meals, unless it’s mostly cabbage soup or salad. Though, it’s notorious for its many health benefits – low in calories, full of vitamin K to keep blood pressure from getting high, vitamin C and sulfur good to detoxify the body, minerals, and fibre.

In my country, we make some amazing cabbage pickle and meals – cabbage cooked with tomatoes, smoked sausage or smoked pork meat and seasonings or stuffed cabbage rolls. These are the cabbage meals I grew up with but since I live in India, I’ve learnt a couple of different ways to cook and enjoy cabbage.

This simple Indian, Andhra style stir fry cabbage with fresh coconut, lentils, mustard seeds, curry leaves and spices is a fun and different way to eat cabbage. I love this fine combination of fresh coconut with vegetables, and cabbage with coconut they do go really well together.

Note: Fresh curry leaves are not easily available in Western markets, you can find them at your local Indian market or you can buy online on amazon.

Step by step Cabbage with coconut stir fry Indian recipe – Cabbage Senagapappu Vepudu

In a deep pan take shredded cabbage, lentils, a pinch of turmeric powder, 1/2 tsp salt and enough water to cover the cabbage. Bring to boil, lower the heat and simmer until cabbage gets almost cooked (soft). Once cooked, drain the water and keep the cabbage aside.

In a food processor or grinder add fresh coconut, coriander leaves, green chillis and ginger. Grind to a coarse, medium consistency.

Now add the cabbage and mix well. Cover the pan with a lid and cook for 10 minutes, stirring occasionally. Add salt if needed.

Serve warm as a side dish.

What you need
  • 1 medium head of cabbage, finely shredded;
  • 2 tbsp urad dal/skinned black gram/white lentils or chickpea, soaked in water for 30 minutes;
  • 2 tbsp fresh grated coconut;
  • 1-2 green chillis, chopped;
  • 1 inch fresh ginger;
  • pinch of turmeric powder;
  • ¼ cup fresh cilantro/coriander leaves;
  • ½ tsp mustard seeds;
  • 1 sprig curry leaves;
  • pinch of asafetida/hing;
  • salt to taste;
  • oil.
Method

  4. Now add the cabbage and mix well. Cover the pan with a lid and cook for 10 minutes, stirring occasionally. Add salt if needed.
  5. Serve warm as a side dish.
