Stir fry beets and carrots recipe – A delicious recipe of beets and carrots stir fried in coconut oil

What you need
2 medium beets, sliced;
3 carrots, sliced;
1 big onion, julienne cut;
3 garlic cloves, finely chopped;
1 sprig fresh curry leaves;
¼ tsp red chilli powder;
salt as per taste;
coconut oil.
Method
In a frying pan heat some coconut oil, on medium-high flame. Add sliced carrots and beets and stir fry until they get soft. It will take some 10-15 minutes.
Once done, set the vegetables aside on a plate.
In the same pan heat some more coconut oil. Add curry leaves, onion and garlic and stir fry until onion starts changing color. Add a pinch of red chilli powder and bring the vegetables into the pan.
Add some salt and stir fry for another 5 minutes.
Serve with rice or Indian bread or as a side dish for grill/roast meat.
