Bhuna Gosht recipe - How to make mutton bhuna recipe

What you need
  • 1 kg mutton meat;
  • 3 onions, chopped;
  • 2 tomatoes, pureed;
  • 1 tbsp coriander powder;
  • ½ tsp red chilli powder;
  • ½ tsp turmeric powder;
  • 1 tsp cumin powder;
  • 1 tsp garam masala;
  • ¼ tsp nutmeg (optional);
  • 1 tsp cumin seeds;
  • 3 cloves;
  • 2 green cardamoms;
  • 1 black cardamom;
  • ½ mace (javitri);
  • 1 stick cinnamon;
  • 1 bay leaf;
  • 1 green chilli, chopped;
  • 1 tbsp ginger garlic paste;
  • ½ cup yogurt (optional);
  • 2 cups water;
  • 1 tbsp ghee;
  • fresh coriander leaves;
  • 1 tsp salt;
  • oil.
Method
  1. Heat oil in a pan and add cumin seeds along with mace, cinnamon stick, bay leaf, cloves, green and black cardamoms. When the cumin seeds start to sizzle, add chopped onions and green chilli. Stir fry on medium flame until onion gets soft. Add ginger garlic paste and stir fry for one minute.
  2. Now add tomatoes pureed, 1 tsp salt and all spices powder except garam masala. Mix well and let it cook until tomatoes release its juices, and the oil starts to separate.
  3. Add mutton pieces and yogurt. Mix all together and cook the mutton on medium-high flame, for 15 minutes, by stirring occasionally.
  4. After 15 minutes, add 2 cups of water, bring to a boil then lower the flame and cover the pot with a lid. Let it cook on low-medium flame for 2 hours or more, until the mutton pieces are tender.
  5. Once done, add garam masala and 1 tbsp ghee. Garnish with fresh coriander leaves.
  6. Serve Bhuna Gosht hot, with any Indian bread or plain rice.
