What you need
  • 1 cup moong dal;
  • ¼ tsp red chilli powder;
  • ¼ tsp turmeric powder;
  • 1 tsp ginger garlic paste;
  • 1 green chilli, finely chopped;
  • ½ tsp cumin seeds;
  • ¼ tsp mustard seeds;
  • 15 fresh curry leaves;
  • fresh coriander leaves, chopped;
  • salt to taste;
  • 2 tbsp oil or ghee;
  • 2 and ½ cups water;
  • 2 dried red chillies;
  • 2 large shallots;
  • optional pinch of asafetida (hing).
Method
  1. Wash properly 1 cup of moong dal in water and soak it in water for 10-15 minutes. Drain the water.
  2. Take moong dal with 2 and half cups of water in a pressure cooker. Add turmeric powder, salt and red chilli powder. Close the lid and pressure cook it on medium flame for 2-3 whistles.
  3. Turn off the flame, let the pressure go down by itself, then open the cover. Check for salt and add more if necessary, then set aside.
  4. Heat oil or ghee in a small pan. When hot, add cumin and mustard seeds and when they begin to sizzle, add green chilli, chopped shallots and ginger garlic paste. Fry for about one minute until the shallot gets soft.
  5. Now add curry leaves, dried red chillies and a pinch of asafetida (optional). Fry for 30 seconds, then take it away from the flame and pour it over the cooked dal. Simmer for 3 minutes.
  6. Garnish with fresh coriander leaves and your moong dal is ready to serve!
