Stir fry beets and carrots paleo recipe – A delicious recipe of beets and carrots stir fried in coconut oil

 

This month my husband and I decided to take a meat break or reduce it from our diet and cook more veggies in different ways.

In India, there is an endless variety of vegetable dishes, you can never get bored of vegetables.

As I have never had beets else than in salads or pickled, Romanian style, I decided to finally do it, to cook the beets Indian style. I will be trying more recipes with beetroot and hopefully share with you my experience.

After searching on Internet for a recipe, I decided to make this stir fry beets with carrots recipe, an easy paleo recipe that caught my eyes. I have used coconut oil to give a coco-nutty twist and for the lots of healthy benefits of it.
The result wasn’t disappointing, it tasted amazing!

Definitely beets and carrots is a perfect vegetables combination. It’s the earthy sweetness of these vegetables and such a vibrant color that left me feeling energized for the whole day. A pleasure for me to cook it and specially to eat it.

Step by step Stir fry beets and carrots recipe

In a frying pan heat some coconut oil, on medium-high flame. Add sliced carrots and beets and stir fry until they get soft. It will take some 10-15 minutes.

Once done, set the vegetables aside on a plate.

In the same pan heat some more coconut oil. Add curry leaves, onion and garlic and stir fry until onion starts changing color. Add a pinch of red chilli powder and bring the vegetables into the pan.

Note: Fresh curry leaves are not easily available in Western markets, you can find them at your local Indian market or you can buy online on amazon.

 

Add some salt and stir fry for another 5 minutes.

Serve with rice or Indian bread or as a side dish for grill/roast meat.

Ingredients
  • 2 medium beets, sliced;
  • 3 carrots, sliced;
  • 1 big onion, julienne cut;
  • 3 garlic cloves, finely chopped;
  • 1 sprig fresh curry leaves;
  • 1/4 tsp red chilli powder;
  • salt as per taste;
  • coconut oil.
