Egg Bhurji Recipe (Anda Burji Recipe) – Indian scrambled eggs recipe

Scrambled eggs with onions, tomatoes, potato, capsicum and spices…it sounds messy, but so delicious and rich dish.

Egg Bhurji (Anda Burji) makes a fantastically quick, nutritious and packed with flavor breakfast, snack or dinner.

Step by step Egg Bhurji Recipe

In a big bowl beat the eggs with a pinch of salt. Chop onions, tomatoes, potatoes, green capsicum, ginger, coriander leaves and keep aside.

Heat oil in a non stick pan. Add cumin seeds and when they start to sizzle, add chopped onions, potato, curry leaves and ginger. Stir fry for 2 minutes.

Note: Fresh curry leaves are not easily available in Western markets, you can find them at your local Indian market or you can buy online on amazon.

Now add salt, turmeric powder, pepper coarse, cumin powder, pav bhaji masala and red chilli powder. Mix well and fry for 5 minutes.

It’s time to add tomatoes and capsicum. Stir fry for another 5 minutes.

Add coriander leaves, mix and pour the beaten eggs into. Keep on stirring the mixture until eggs are cooked.

 

Serve Egg Bhurji with roti, pavs, parathas or bread.

Ingredients
  • 8 eggs;
  • 1 tbsp fresh ginger, grated or finely chopped;
  • 3 onions, chopped;
  • 1 potato cut into small cubes (optional);
  • 2 tomatoes, chopped;
  • 1 tsp cumin seeds;
  • few curry leaves;
  • 1/2 red chilli powder;
  • 1/4 turmeric powder;
  • 1/2 tsp pepper coarse;
  • 1 tsp cumin powder;
  • 1/2 green capsicum, chopped;
  • 1 tsp pav bhaji masala;
  • 1/2 tsp salt;
  • 1/2 cup fresh coriander leaves, chopped;
  • oil.
