Mutton do pyaaza recipe – Indian mutton and onion gravy recipe

Before moving to India, lamb, mutton or goat was rarely prepared in my house. It wasn’t easy to find this meat at the butcher.

In India, there is such a variety of mutton recipes. And then there is the pressure cooker that saves lots of cooking time.
However, for this recipe Mutton Do Pyaaza, I am not using the pressure cooker but just a normal pot and let it cook on slow flame for hours, until the meat fall of the bone tender. Of course if you are out of time, you can use a pressure cooker.

Mutton Do Pyaaza is a tasty gravy prepared with mutton and lots of onions.

Here’s how to make Mutton Do Pyaaza

Heat ghee in a deep pan and add finely chopped shallots, ginger garlic paste and dried red chillies. Saute and stir for 3-4 minutes on medium flame.

Add grated onions and fry for about 5 minute.

Now add all spices and salt (about 1/2 tsp), stir fry 1-2 minutes. Add ½ cup water and let it cook until the ghee begins to separate from the spices (about 10 minutes).

Add mutton and stir well. Let it cook for about 15 minutes on medium flame.

Now add 2 cups of water and when it starts boiling reduce the flame, and let it cook covered for about 3 hours until the mutton pieces are tender.

When the mutton is tender add cauliflower and stir. Check for salt and adjust if necessary. Let it cook uncovered for about 10 minutes, on low flame.

Garnish with fresh coriander and Mutton Do Pyaaza is ready to serve!

  • 300 gm mutton pieces;
  • 4-6 shallots finely chopped;
  • 3 grated onions;
  • 1tbsp ginger garlic paste;
  • 2 dried red chillies;
  • 1 inch cinnamon;
  • 3-4 cloves;
  • 2 green cardamom;
  • 1 black cardamom;
  • 1 tsp coriander powder;
  • ½ tsp red chilli powder;
  • ¼ tsp turmeric powder;
  • 1 medium cauliflower florets;
  • salt to taste;
  • 2 and ½ cups water;
  • 2-3 tbsp ghee.
